A Toast to Tuesday { Brie, Nectarine & Honey Sourdough Toast}

Maybe it is unpopular opinion, but Tuesday is one of my favorite days of the week. Monday always seems to be about catching up, prepping and planning, but by Tuesday, I start to settle into the week ahead. So why not celebrate it? and with that a “Toast to Tuesday” has come to be- a little blog feature I’ll be sharing the first Tuesday of each month, featuring new bites of deliciousness piled upon toast. With summer quickly coming to an end and being the first day of the ‘ber months I decided to celebrate one of my favourite stone fruits from this fleeting season. So, here’s to Brie, Nectarine and Honey Sourdough Toast.

Brie, Nectarine and Honey Sourdough Toast

Buttery, toasted sourdough piled with creamy brie, juicy nectarines, a drizzle of honey and a sprinkle of fresh thyme. The best combination of sweet, savoury, creamy and crunchy all in one bite. Bringing a little fancy to an ordinary Tuesday, you don’t need a special occasion to toast your day!

If you want to recreate this little slice of perfection you just need a few simple ingredients:

  • Sourdough Bread
  • Ripe Nectarine
  • Brie
  • Honey
  • Fresh Thyme
  • Sea Salt {Optional}

How to make it:

Toast the sourdough – I like mine golden and crisp on the outside while still having a little softness in the middle. I toast mine in the oven on one side, then flip it over and spread with a little butter.

Top with slices of brie and pop back into the oven until the cheese is deliciously gooey and melted.

Arrange slices of nectarine over the warm brie, drizzle with honey and finish with fresh thyme and a sprinkle of sea salt.

Enjoy, fancy toast made for an ordinary Tuesday!
