A Toast to Tuesday { Apple Crumble French Toast}

Some recipes just feel like fall and this is definitely one of them. For this month’s Toast to Tuesday, I’m taking one of my favorite cozy desserts -apple crumble and turning it into breakfast.
Think golden slices of French toast, topped with warm cinnamon-sugar apples and a buttery oat crumble. It’s sweet, comforting and brings the perfect amount of cozy!
While this may look like a fancy weekend breakfast, it’s actually quite simple to pull together. The apples and crumble can cook at the same time, and while they are filling your house with the scent of fresh baked pie, you can get the table set and the French toast ready!

APPLE CRUMBLE FRENCH TOAST
The Crumble
This is my favourite part, because who doesn’t love that crumbly, buttery, crunchy topping! {& I usually have some left over which is delicious on yogurt topped with some apples too!}
You’ll need:
- 1 Cup all-purpose flour
- 1 Cup oats
- 1/2 Cup light brown sugar
- 1 Tsp cinnamon
- 1/2 Cup unsalted butter
- 2 Tbsp pure vanilla extract
Pre-heat your oven to 350°F
In a bowl combine the flour, oats, brown sugar & cinnamon.
Melt the butter & add to the dry ingredients along with the vanilla. Mix everything together until the ingredients are well combined and crumbly.
Spread Mixture evenly onto a baking sheet lined with parchment paper, bake for approx. 20 minutes, stirring halfway. Keep an eye towards the end – you’re looking for a lovely golden-brown crumble.
The Apple Topping
For the apples, I like using Honeycrisp as they hold their shape while cooking and have a perfect balance of tart & sweet.
You’ll Need:
- 2-3 large Honeycrisp apples, chopped
- 3 Tbsp unsalted butter
- 2 Tbsp light brown sugar
- 1/2 Tsp cinnamon
Melt the butter in a frying pan, then add the chopped apples, brown sugar and cinnamon.
Cook over low heat, stirring occasionally until the apples are tender and coated.
I like to cook them low and slow. It generally takes the same amount of time as the crumble, which makes the timing of this recipe flow easily.
The French Toast
While the apples and crumble are cooking, it’s time to start on that French toast.
For the dredging you’ll need:
- 2 eggs
- 1 Cup milk
- 1 Tbsp pure vanilla extract
- 1/2 Tsp cinnamon
In a shallow bowl whisk your eggs, add in milk, vanilla & cinnamon and continue whisking till well combined.
Dip your bread into the mixture, ensuring both sides are coated. I usually make 4-6 slices depending on the size of your bread slices. {I used sourdough, but brioche would be equally delicious}
In a large frying pan melt approx. 3 tablespoons of butter, add your coated bread slices and cook on both sides until golden brown.
Let’s Assemble
Once everything is ready it’s time to build your stack.
Start with the golden French toast, then spoon those warm cinnamon apples on top & finish off with a generous sprinkle of the buttery crumble.
Try it with:
- A drizzle of maple syrup {My Fave!}
- Caramel Sauce
- Whipped Cream
- Vanilla Ice Cream
There you have it – Apple Crumble French Toast all those cozy fall flavours in one delicious stack!

This Apple Crumble French Toast smells amazing, tastes as good as it looks and is the perfect cozy recipe for the fall days ahead! You don’t need a special occasion to whip some up. It’s perfect for a slow Sunday, brunch with friends, or just a little Toast to Tuesday!
