Egg Roll Bowl

I love a simple yet delicious dinner recipe and this one pan Egg Roll Bowl is just that! Its 12 ingredients, takes hardly any time, is healthy and so so good!

I can’t say it enough this recipe is so simple and quick, great for those busy nights!

Ingredients

  • 1 Package of ground turkey {approx. 450g}
  • 1 Package of coleslaw mix {approx. 397g}
  • 2 Tbsp Olive Oil
  • 1 Tbsp Ginger minced
  • 2-3 Cloves of garlic minced
  • 1/2 Sweet onion finely diced
  • 1/4 Cup of vegetable broth
  • 1 Tbsp Rice Wine Vinegar
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 1 Green onion sliced
  • Salt & Pepper
  • Sesame Seeds

Instructions

  1. In large skillet over medium heat, add 1tbsp olive oil, garlic and ginger, approx 1-2 mins until fragrant
  2. Add ground turkey, season with salt and pepper, cook until no pink remains approx 8 mins. Once cooked transfer to bowl and set aside.
  3. Add remain 1tbsp of olive oil and sweet onion, cook until tender and translucent, approx 3 mins.
  4. Add Vegetable broth, rice wine vinegar, soy sauce, and sesame oil to skillet, stir to combine
  5. Add coleslaw, stirring until tender approx. 3-5 mins, transfer turkey back to skillet, stir to combine and warm through Approx. 2 mins
  6. Transfer to serving dishes and top with green onions and sesame seeds and enjoy!

I recommend serving with sriracha and soy sauce on the side for added heat or saltiness!
Serves 2-3 people

*Note* you could easily substitute the ground Turkey for pork, beef or my fav veggie ground.
